So I bought a replacement gripshift and the cable is too short. Do I have to buy a 5.0 that can be disassembled and reuse my old cable? Bummed because this is the week of my stay cation and I had a ride planned.

Are any other shifters compatible with the stock 3.0 SRAM derailleur?

Just buy a cable for a tandem and fit that to the grip-shift. I've just recabled my bike-e - normal cable for front brake, tandem brake cable for rear and two tandem gear cables for the hub & derailleur. Just need to cut the cables down a bit when they've been fitted. Easy.
